Recipe of the Month – September: Chef Jamie’s Roasted Okra

Roasted Okra

2 pounds fresh okra, cleaned and halved

2 teaspoon vegetable oil

2 teaspoon sea salt

2 teaspoon curry powder

2 teaspoon chile powder

2 teaspoon ground cumin

Preheat oven to 450 degrees.  Wash okra and dry.  Slice okra in half lengthwise. Place okra in bowl, drizzle with oil, toss to coat and add remaining ingredients.  Toss again.

Spread evenly on lightly greased/sprayed baking sheet. Bake 10 minutes.
