Recipe of the Month: Kale Chips

Kale chip recipe courtesy of Chef Lindsey.
1 large bunch Kale, stems removed & leaves torn into pieces
1 tbsp extra virgin olive oil
salt and pepper to taste
pinch cayenne or paprika (optional)
1. Preheat oven to 400 degrees F
2. Thoroughly pat kale dry (very important)
3. In a large bowl, drizzle kale with oil and sprinkle w. salt, pepper & spices
4. Using hands, massage oil into kale leaves to evenly coat
5. Spread evenly, without layering, on large baking sheets
6. Bake until leaves are crisp (8-12 mins)
